Taste Testing Healthy Style

In this journey to improved health, I'm fortunate to have several like-minded people in my corner.  One of those people lives right next door and happens to be a very dear friend.  We've spent many hours sharing ideas, books, recipes and meals.  Last week we tested some new-to-us recipes.


Baked Oatmeal was definitely a keeper.  It was moist, dense, and very hearty.  This recipe is so versatile :: the perfect base for experimentation (spoken by a rigid recipe follower).  My favorite part is the subtle sweetness from slices of banana that line the bottom of the pan.  The recipe can be found in Heidi Swanson's new book Super Natural Everyday, or you can find it here.


From the same book, we tried Heidi's Kale Salad.  In case you're wondering, that's flakes of toasted coconut.  Yes....kale and coconut in the same dish with a bit of an Asian flair.  The kale turns out nice and crispy and the coconut lends just a slight undertone of flavor that takes a moment to notice.  Very different, but very nice. 


We also made Black Bean and Sweet Potato Burgers (but wrapped them in a lettuce leaf instead of forming burgers) from Crazy Sexy Diet.  This recipe is a tad bit time consuming but the flavor certainly makes up for it.
