I'm on a soup kick lately. It's seems to be the quickest and easiest way to really pack a punch with super healthy ingredients. This soup is from RecipeZaar, one of the many great recipe websites out there. It is filling and has a very nice consistency (not too thin and loaded with chunks of goodness). The flavor is fairly mild, with just a hint of ginger. Since I'm the only one in my house who doesn't have a tofu phobia, I'll be eating this for days. Yum!
