Soup, Soup and More Soup



This soup is a conglomeration of ingredients we had in the kitchen yesterday.  I'm going to call it Colorful Coconut Curry Stoup.  Rachel Ray uses the term stoup and it's fitting here.  It's thicker than soup and chock full of beautiful veggies.  It was dinner last night, lunch today, and I'll happily eat it tomorrow too.  


It's a little damp outside and I can't seem to keep warm.  I was never a soup girl before, but this year a warm bowlful is the first thing that comes to mind.  The second thing coming to my mind today is baked apples.  This recipe sounds delicious :: organic vanilla will make it special, I think.  I'll omit the sugar since there's no room for it in my diet these days.  No gluten either.  Or dairy.  It's been surprisingly manageable....as long as we prepare our food at home.

I have never been a soup gal either but I am finding myself eating it this year, too. I do think it is almost better the second day. Great post! xo Diana

I'm really enjoying your posts! I'm a Virginia girl living in the Dominican Republic, and missing those great VA apples! I can get organic apples from WA here so I make a big batch of baked apples once a week, then we have them on our oats every morning. It feels a little like home...
It is pretty easy to be gluten and dairy free in ones own home! :) That's how I like it, but I've been lax about gluten lately.

I just made a delicious soup: Galatian Garbanzo Soup from _The Enchanted Broccoli Forest_. I just got that cookbook for Christmas this year. I've long been a devotee of the Moosewood soups, and so far so good with this companion cookbook. i particularly like the Galatian Garbanzo Soup b/c my 2 year old loves it, and it sticks to the bones.

I could eat soup every night of the week.
