A Tasty Recipe

Now that spring is here, fresh crispy salads are taking the place of comfort soups in our house. Last night I hosted a gathering of quilting friends and served this lovely salad. It has a nice little crunch due to the jicama. If you're not familiar with jicama you can read about it here (it's the little pile of white cubes that you see in the photo below). I made the dressing according to the original recipe (from SELF magazine) which calls for 1/4 cup of olive oil instead of reducing the amount to two tablespoons as the poster on RecipeZaar did. My quilting friends enjoyed the salad, and so did I.
