Winter and a Fellow Blogger's Soup

This is what I awoke to on Wednesday morning. I couldn't wait to throw on my coat, grab my camera and head outside to capture it.
And then I saw this recipe for Southwestern Black Bean, Barley and Sweet Potato Soup. It's perfect for a wintery day. I have to admit that I've never cooked with barley before and I didn't really know where to find it in the grocery store. Truthfully, I didn't know much about barley at all. Who knew it was so good for us? Well, this soup is really easy to make, is full of healthy ingredients, and definitely leaves one feeling satisfied. It's a keeper for sure.
And if you've never tried Trader Joe's Fire Roasted Corn, I'd highly recommend it.
