A little wilted this morning, but still just as tasty. I'm having a leftover
Roasted Pepper and Goat Cheese Sandwich for breakfast. Yum. I made these last night for my quilting guild friends. We meet at my house once a month and they bravely taste my new recipe attempts. This one is from Ina Garten. It's really easy to make and I made it even easier by using jarred roasted red peppers from Trader Joe's instead of roasting my own. The only other change I made to the recipe was to use a log of plain goat cheese and doctor it up with fresh herbs from my garden :: a little bit of mint, thyme and parsley. I served them with the salad and Cinnamon Vinaigrette that I've shared here before in
this post.
Now, if you'll excuse me, breakfast is calling.
