I have a subscription to Eating Well magazine (it's a gift from a friend - lucky me). The recipes are really nice and the photography is gorgeous. Last year, my cousin Jen told me about a recipe she tried from the April (2009) issue called
Soy-Lime Roasted Tofu. She and her family loved it and I happened to have that issue so I thought I'd give it a try. I'm not sure I would have chosen to make this particular recipe if it hadn't been recommended, but I'm glad I did. It's delicious and I've been making it ever since.

This recipe is super easy :: 4 ingredients. Just drain the tofu, pat dry, and cube. Throw the tofu cubes into a bag with the marinade (soy sauce, lime juice and toasted sesame oil), and allow
the flavors to mingle for a few hours. Then, roast for twenty minutes and you're done.

I suppose this could be added to brown rice for a lovely entree, but mine never quite makes it that far. I love to pick up a few here and there, throughout the day, for a great protein snack when I'm feeling a tad hungry.
Mmmmmm. The consistency is nice and the flavor :: perfect.
